To support and encourage these efforts,&nbsp;<strong>Fanny Giansetto<\/strong>&nbsp;and&nbsp;<strong>Camille Delamar<\/strong>founded&nbsp;<strong>Ecotable<\/strong>&nbsp;seven years ago. As a Social and Solidarity Economy enterprise, Ecotable created France\u2019s first sustainable restaurant certification program. To date, 295 establishments have been certified, earning between one and three Ecotable stars.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">To showcase the commitment of these businesses, Ecotable has organized an annual awards program for the past three years, recognizing excellence across a wide range of categories, from independent restaurants and institutional catering to bakeries, pastry shops and catering companies.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The rankings are based on the results of Ecotable\u2019s annual audit, which combines a detailed questionnaire covering more than 150 criteria with an analysis of monthly purchasing invoices, menus, water consumption and other operational data.
