France’s Fourteen Most Committed Dining Destinations Honored

Plant-based restaurants, neighborhood canteens, sustainable meat programs: on Monday evening in Paris, Ecotable presented its annual awards to highlight the most exemplary establishments within its sustainable dining certification program.

Despite the challenges currently facing the hospitality industry, many restaurateurs continue to push forward on environmental and sustainability issues. To support and encourage these efforts, Fanny Giansetto and Camille Delamarfounded Ecotable seven years ago. As a Social and Solidarity Economy enterprise, Ecotable created France’s first sustainable restaurant certification program. To date, 295 establishments have been certified, earning between one and three Ecotable stars.

To showcase the commitment of these businesses, Ecotable has organized an annual awards program for the past three years, recognizing excellence across a wide range of categories, from independent restaurants and institutional catering to bakeries, pastry shops and catering companies.

The rankings are based on the results of Ecotable’s annual audit, which combines a detailed questionnaire covering more than 150 criteria with an analysis of monthly purchasing invoices, menus, water consumption and other operational data. The objective is to provide a rigorous, evidence-based assessment of each establishment’s environmental performance.

This year, 14 awards were presented, including four new categories: Neighborhood Canteen, Caterer, Sustainable Meat, and Responsible Beverage Program.

Among the standout winners were Vivide, the acclaimed Parisian fine-dining vegan restaurant that has received praise from Le Figaro on multiple occasions; La Butte, the hotel and restaurant led by chef Nicolas Conraux in Brittany; and Maslow Group, the company behind the Paris restaurants Maslow and Fellows.
